Ground Pimento
Ground Pimento or allspice as it is also known, comes from the red-brown berries of the pimento tree which originally grew only in the tropical climate of Jamaica. Columbus brought it from the New World to Europe. It has a mildly spicy but not overly hot taste which combines the flavour and scents of clove, cinnamon, nutmeg and pepper. It is used in sauces and soups, for pickles, marinating game, fish and other types of meat. It is also suitable for compotes, puddings and sweet pastry dishes.
Tip: Ground pimento can be used instead of cinnamon, clove or nutmeg. Try a light dusting of powder over cream or on coffee, it is delicious.
