Cumin

Cumin is used to add a pleasant, specific flavour to many dishes in India, North Africa, the Middle East, Mexico and the US. In India, cumin is roasted before being used to bring out the flavour, particularly in dishes made with couscous. In Arabic countries it is often added to dishes with minced meat and vegetables. Whilst in Texas, it is added to the speciality chilli con carne.
