Mace
Mace comes from the tropical nutmeg tree, which grows in Indonesia, West India, Brazil and Madagascar. The fruit is a berry that consists of one seed that is covered with lacy petal. A petal is torn, dried and sold. It has a refreshing and very strong scent. Its taste is spicy, slightly bitter and highly aromatic. This spice is used when preparing soups, meals containing molluscs, cheese soufflé or cream cheese desserts.
Tip: Add to béchamel or onion sauce, it should not be left out.
