Lemon Zest
Lemon zest comes from mellow lemons, which have been dried and ground. It comes only from non-chemically treated lemons as opposed to the ones that are usually available on the market. It has its own characteristically fresh aroma and citrus taste. It is used mainly in sweet dishes and in fruit cakes or puddings. It is also great for seasoning fish, can be used in various spreads, sauces and meat marinades.
Tip: When using for sweet baking, dip the zest in warm water for 20 minutes, this will make the taste milder.
