Whole Allspice
Allspice is a red-brownish berry of a tree originally found in Jamaica. Columbus brought it back to Europe from the New World. It has a pleasant and gently burning taste, combining the scent and taste of clove, cinnamon, nutmeg and pepper. It is used when making sauces and soups, pickling gherkins and marinating game, fish and other meats. It is also appropriate for stewed fruit, puddings and sweet pastries.
Tip: Allspice is easily digested, so it is suitable for healthy cooking instead of ground peppercorns.
